Peach, Basil & Goat Cheese Pizza

As they say, simple is best!  Especially when it comes to summer suppers.  We often enjoy this with fresh peaches from our yard and if in the mood, we’ll even prepare this on the grill!  This sweet and savory pizza is perfect as an appetizer or paired with a side salad for a light dinner.  I kept this meal as light as can be with only four toppings, but feel free to add on what you wish.  Perhaps mozzarella, thinly sliced onion or red pepper flakes or pepperoncini’s for a kick!  Just remember…simplicity is key with this dish!

The Starting Lineup

Refrigerated pizza crust (i.e. Pillsbury’s BEST Classic Crust)
• 2 TBSP olive oil
• 1 -2 fresh peaches, pitted and sliced
• 4oz goat cheese
• 1/3 cup fresh basil, chopped
• Balsamic Glaze (*NOT to be confused for balsamic vinegar)

 
Preheat your oven to 400 degrees. Unroll your dough, place on a baking sheet or pizza stone and drizzle with olive oil. Bake for 10 minutes.  Remove the par-cooked dough and add on the peach slices and crumble the goat cheese overtop, place back in the oven for another 10-12 minutes or until the crust is a golden brown.  Remove and immediately sprinkle on the fresh basil and drizzle with the balsamic glaze.

*Bake dough according to your recipe or store-bought package directions. Remove halfway through, add toppings and finish baking. Dusting cornmeal under the dough before baking yields a great crunch!

Grilled Brie, Bacon, Arugula and Fig Sandwich (The Figgy Piggy)

This “gourmet” bistro style sandwich will wow your guests, yet is simple and quick for you to whip up!
The unique flavors of the peppery arugula, salty bacon and sweet figs go soooooo wonderfully together.  They stay held together by the mild, creamy melted brie and your last taste bud gets love from the crunchy, slightly sour note of the grilled bread.  So basically, this awakens all your senses, have I sold you yet? 😉
…and if sandwiches aren’t your thing, you can absolutely pile these same toppings onto pizza dough or flatbread!
The Starting Lineup
Loaf of quality sourdough or ciabatta bread (8, 1/2″ slices)
1 pckg bacon, cooked till crisp
1 round brie cheese (1/4″ slices)
2 cups arugula
1 jar Fig Jam/Preserves (i.e. Bonne Maman brand)
2 Tbsp butter
4 Tbsp mayonnaise 
Heat a cast-iron pan or griddle to medium-high heat.
On one side of your bread slices, spread a thin layer of mayonnaise (this will create a perfect golden brown crust).  Turn slices over and spread a layer of the fig preserves on each slice.  Next layer on the brie cheese slices, crisp bacon and the arugula.  Top with the remaining bread, fig side down.
Add the butter to your hot pan or griddle and grill each side for about 3-4 minutes, until golden brown and the brie has melted.
Cut each sandwich on the diagonal and serve with a small salad or soup.  Enjoy!

Turkey and Brie Quesadillas w/ a Roasted Apple Pico de Gallo

Whether you’re hosting a ladies brunch, a dinner party or would just like to elevate your weeknight dinner with an EASY, yet impressive meal…this recipe will do the trick!  

The sweet and savory flavors are just outstanding!  You also have creaminess from the brie, sweetness from the roasted grapes and cranberries, freshness from the spinach and a nice crunch from the apples, pecans and browned tortilla.  Flavor sensation bliss!

…And don’t you dare say that you “cannot cook” or it sounds “too hard” or “too fancy”.  You can and it’s neither!  This entire recipe will take less than an hour to prepare whether you use it for a meal or an hors d’oeuvre.p at your next get together…and who can’t slap together a flipping quesadilla, because that’s exactly what it is!

*the Pico de Gallo can be made ahead of time and refrigerated until use.

*I recommend the best, quality deli roasted turkey.  My local grocer here in Texas, HEB, actually rotisserie’s whole turkeys and I have them slice up one pound on a number 2 setting.

The Starting Lineup

  • 1 lb quality deli turkey, sliced thin
  • 8 oz wheel brie cheese, sliced
  • 4 10″ flour tortillas 
  • 1 1/2 cups Spinach leaves, fresh
  • 2 sweet onions, sliced
  • 2 Tbsp Dijon mustard
  • 2 Tbsp honey
  • Butter, 1 /2 stick, divided

Roasted Apple Pico de Gallo

  • 1 large honey crisp apple, sliced and chopped
  • 1 cup seedless red grapes
  • 1/2 cup cranberries, fresh (frozen is fine)
  • 1/4 cup green onions, sliced
  • 1/4 cup pecans, chopped
  • 1 jalapeño, seeded and finely diced (optional)
  • 2 Tbsp honey, divided 1:1
  • 1 Tbsp butter, melted
  • 1 1/4 tsp cinnamon, divided

Begin this simple, but oh so fancy tasting recipe by preparing the sweet pico de gallo…preheat your oven to 375 degrees and line a small baking sheet with foil.

While the oven is preheating you’ll begin to caramelize the onions.  In a sauté pan over medium low heat, place the sliced onions and 3 tbsp butter (plus a pinch of salt and sugar) and allow to cook down till soft and that beautiful caramel color.  Meanwhile….


In a large bowl, gently fold together the grapes, cranberries (again, completely frozen here is just fine), 1 tablespoon of the honey,  1 Tbsp melted butter and 1/4 tsp of the cinnamon.  Pour onto the baking sheet in a single layer.  Place in the oven and allow to roast for 20 minutes.

Once finished, pour the roasted grapes and cranberries, plus juices, back into the large bowl and allow to cool.  Remember, you’re still cooking down those onions…

To the cooled, roasted fruit:  add the apples (I like to chop right before to avoid browning), green onions, pecans, jalapeño (optional) and remaining 1 Tbsp of honey and 1 tsp of cinnamon.  Toss gently to coat together. 


In a small bowl, whisk together the Dijon mustard and the honey.

Assembly time!!  Preheat a large skillet to medium heat and add 1 tbsp of butter to melt.  On each tortilla, spread 1 Tbsp of the Dijon-honey mixture on one side and lay (uncoated side down) into the hot pan.  Top half of the tortilla with the sliced turkey, spinach, brie slices and the caramelized onions.  Fold in half and allow to brown; flip to brown the other side.  Repeat with remaining ingredients.  Makes 4 filling quesadillas.

Allow to cool for 2-3 minutes and using a pizza cutter, slice each browned quesadilla into 4 triangles.  Place the slices on a large platter along with a bowl of the Roasted Apple Pico de Gallo for garnishing…enjoy!!  

Strawberry Basil & Goat Cheese Chicken w/ Grilled Romaine Salad

I’m lightening it up and fancy’ing it up (I realize that’s not real a word..but it works!)!  No despite the glamorous sounding name to this recipe, it’s actually super easy and quick!  I honestly say that this can be made in well under 30 minutes.  

It has so much flavor, so much FRESH flavor to be exact.  You get in fruit, veggies and protein here and zero guilt or that yucky “I’m stuffed” feeling.  Which is why I pair mine with a crisp glass of vino..I mean c’mon!  I have to have a little naughtiness! 

*Balsamic Glaze:  it’s not to be confused with “balsamic vinegar”.  This is a thicker, syrup-like glaze with a slightly sweet finish.

The Starting Lineup

  • 4-6 chicken cutlets
  • 2 cups strawberries, quartered
  • 4oz goat cheese, crumbled
  • 1/3 cup fresh basil, chopped
  • Extra virgin olive oil
  • Balsamic glaze
  • 2 cloves garlic, minced
  • 1 bunch romaine lettuce, quartered 
  • Salt & pepper 

We’ll start this light and tasty recipe by cleaning and quartering the strawberries and chopping up the garlic and basil..or be fancy and do a chiffonade 😉   Next combine the fresh basil to the strawberries and 1 tbsp each of extra virgin olive oil and the balsamic glaze, gently toss together.  Cover and set aside.

Next, heat up either your grill or a grill pan with a couple Tbsp’s of olive oil on your stovetop to medium-high heat.  Generously season the chicken cutlets with salt, pepper and the minced garlic and place on grill/pan.  Cook for approximately 4 minutes per side, till cooked through and beautiful golden brown grill marks appear.  Set aside. 

Now that the chicken is done, it’s time for our lettuce!  To each quartered piece of romaine, drizzle a bit of evoo, balsamic glaze and a generous sprinkle of salt & pepper.  Place ‘face-down’ onto the grill pan and let the grill make those fantastic char marks. 

To serve!!   On a large family style platter (or individual plates), lay down the grilled romaine and top with the chicken cutlets.  Spoon the strawberry-basil mixture all over top and sprinkle on the goat cheese crumbles!  I also like to add another drizzle of that sweet balsamic glaze over top and another pinch of kosher salt & pepper.  Enjoy!! 

Buffalo Chicken Kabobs w/ Grilled New Potatoes (& easy blue cheese dressing)

I’m pretty sure I’ve never (ever) met a person that doesn’t like buffalo wing sauce.  Now some may like it on crispy drumette wings, some that prefer it on the battered boneless variety, but everyone just loves that sauce!  Unfortunately, most of us cannot eat that way everyday, so how about combine those great flavors into a healthier grilled recipe!

My lighter, summertime go-to is a full meal that is chocked full of protein, vegetables and even a light(er) Bleu cheese dressing!  So you will feel full without the guilt!  

*If you prefer ranch over Bleu cheese than go right ahead.

*Use whatever vegetables you prefer on your kabobs.

*Can be made outdoors on the grill or even on a stovetop grill-pan.

*If you don’t have buttermilk on hand, combine 1 cup of regular milk with 1 tbsp of either white vinegar or lemon juice, stir.  Let sit for 5 minutes.  Done!

Chicken

  • 2lbs chicken (breasts, tenders or thighs), cut into 2″ cubes
  • 2 Bell peppers (any color)
  • 1 red onion
  • 8 oz Frank’s Red Hot Sauce
  • 1/2 stick butter
  • Salt & Pepper

Potatoes

  • 2 1/2lbs New/Red Potatoes
  • Extra virgin olive oil
  • Celery Salt

Bleu Cheese Dressing

  • 8oz reduced fat Blue cheese crumbles
  • 8oz light sour cream
  • 1/2 cup buttermilk 
  • Salt & pepper

Garnish (optional)

  • Celery, VERY thinly sliced
  • Green onions, sliced
  • Jalapeños, sliced 

SAUCES:  

Buffalo Wing Sauce:  In a small pan or in the microwave melt the butter.  Whisk in the bottle of Frank’s Red Hot Sauce and set aside.

Easy Bleu Cheese Dressing:  In a small bowl, whisk together the Bleu cheese crumbles, sour cream and buttermilk.  Salt & pepper to taste, cover and transfer to the refrigerator till needed.

Start by rinsing and cutting the vegetables and the chicken into kabob-sized pieces. 

Skewer and salt & pepper to taste.  *If using bamboo sticks, make sure to soak the skewers in water for 20 minutes prior.   If using metal skewers, make sure to lightly coat in oil so the meat doesn’t stick.
Meanwhile, bring a pot of salted water and the potatoes to a boil.  Cover and simmer till just fork tender (about 20 minutes).  Transfer the par-cooked potatoes to a bowl and drizzle with extra virgin olive oil and the celery salt to taste (about 1 tsp).

With either the outdoor grill or your grill pan indoors, heat to medium-high heat and make sure to oil the grill grates or pan.  Once ready to go, start your kabobs and cook through (15-20 minutes).  Transfer the kabobs to a tray and brush on the buffalo wing sauce.  *You can start to brush the sauce on during the last few minutes of grilling, just add a little at a time and finish once done to avoid flare ups.Next, add the potatoes to the grill/pan and turn often for 10 minutes, until crisped up.


SERVE:  On a large serving platter, lay out the grilled potatoes and drizzle on the Bleu cheese dressing you made earlier and sprinkle on the celery, green onions, jalapeños.  Top with the buffalo chicken kabobs (you can remove from the skewers if preferred) and serve with the remaining buffalo wing sauce for dipping. 

Pierogi Pea Salad w/ Grilled Kielbasa

Here you have it… A simple, hearty meal that you can prep, cook, enjoy and clean up within an hour!  Hey, what’s not to enjoy about that??  Perfect for a weeknight family dinner!

It’s honestly a very nice pairing and balance of flavors too.  The rich sausage and onions are offset by the bright freshness with the dill, chives and bit of sour cream.  Plus the warm potatoey-cheddar filling against the cool dressing is an added bonus!  Again, what’s not to love about that?!

The Starting Lineup

  • 16oz pckg pierogis (I used frozen potato-cheddar filled)
  • 1 cup frozen peas
  • 2 Tbsp mayonaisse
  • 2 Tbsp sour cream
  • 2 Tbsp chives, fresh and chopped
  • 1 Tbsp dill, fresh and chopped
  • 1 tsp dijon mustard
  • kielbasa sausage, quartered (I used two packages)
  • 1 yellow onion, thick sliced
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp butter    

In a large bowl, whisk together the mayo, sour cream, chopped chives and dill and the dijon mustard.  Salt and pepper to taste.  Cover with plastic wrap and place in the fridge. 

 Next bring a large stockpot of water to a boil, while you sauté the sliced onion in the extra virgin olive oil and butter over medium heat for 4-5 minutes.  Add in the quartered kielbasa sausage and sear to warm through.  Turn down to low to keep warm while you finish up the pierogi salad. 

   Cook the pierogi’s to the package directions (boil for 4-5 minutes) and then add the cup of frozen peas to that same boiling pot for the last minute.

Drain the peas and pierogis, rinse and pat dry.  Add both to the dressing you made earlier and gently toss to coat. 

   Serve with the kielbasa, onions and a side of spicy mustard, enjoy! 

 

Grilled Lemon-Dill Chicken w/ Greek Chopped Salad

I’ve loved the bright fresh flavors of Greek food far before the recipes infiltrated Pinterest or The Pita Jungle restaurant took off.  Crunchy vegetables, saltiness from the kalamata olives and feta and the brightness of lemon juice are my guilty pleasure.  Well wait, maybe guilty isn’t the correct word, because you never feel too heavy after eating this cool and fresh meal!  Besides the health benefits  of this recipe, I love how fast it all comes together! So it’s great for a weekday dinner or a quick meal to enjoy grilling and eating by the pool on a hot day…

The Starting Lineup

Chicken

  • 4-6 thin cut chicken breasts
  • 2 garlic cloves, minced
  • 1 Tbsp dill, fresh (or 1 tsp dried)
  • 1 tsp garlic powder
  • Juice of 1-2 lemons, plus zest
  • 2 Tbsp extra virgin olive oil
  • Kosher salt & pepper, to taste  *I used lemon-pepper, because I had it on hand

Salad

  • 1 15oz can garbanzo beans, rinsed
  • 2 cucumbers, seeds removed and sliced
  • 4 to 6 Roma tomatoes, chopped (or cherry tomatoes halved)
  • 1/2 red onion, sliced
  • 1/2 cup kalamata olives
  • 1/2 cup feta cheese, crumbled or cubed
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Kosher salt & pepper, to taste   

Beginning with the chicken, we’ll get the marinade ready.  In a small bowl simply combine the garlic/garlic powder, dill, lemon juice and zest, evoo and salt & pepper, whisk together.  In a large ziplock bag add in the chicken breasts and pour in the marinade.  Seal, place on a dish (to avoid spillage) and let marinate in the refridgerator for 1 hour.  *Do not let marinate too long, as the acid from the lemon juice can change the texture of the chicken. 

   On to the salad!  Prep your veggies by rinsing, chopping and dicing *For the cucumber, slice in half length-wise and take a spoon to gently scoop out the seeds/center.  This will also help to eliminate the salad from getting too soggy.  Also, drain the can of garbanzo beans and rinse/pat dry. 

   In a large bowl, combine the garbanzo beans, cucumbers, tomatoes, red onion and kalamata olives.  In a smaller bowl, whisk together the lemon juice, evoo, oregano, salt and pepper.  Pour the dressing over the vegetables and sprinkle on the feta cheese.  Give a gentle toss, cover and refridgerate while you cook the chicken. 

 Now here you can either start up your outdoor grill or use a grill pan indoors.  *Heck, I dont care if you decide to bake the chicken.  Do what makes you happy.  Remove the chicken from the refridgerator and place on your heated grill/medium-high heat grill pan.  Grill the chicken for about 3-4 minutes on each side and let rest for 5 minutes. 

   On a large family-style serving dish, pour on your Greek salad and layer the grilled, sliced chicken over top.  Enjoy!!
