Green Chile Chicken Pizza

I feel like I’ve been on a sort of hiatus.  I imagine that is also the definition of ‘summer’.  I now see how my kiddos summer break is relaxing for them, but in turn, means more work for me!  With only 1 week left till school begins, I’m about to be on my A-game again and can cook and RELAX.

This recipe is dedicated to the days I have my boys hollering for pizza, as I’m excited it’s a Taco Tuesday!  The best of both worlds!  Our local Texas grocer, HEB, has a yearly Hatch chile roasting event and its spectacularly delicious!!  That being said, I purchased a roasting bag full and came up with this family pleaser!  Hint: you can just as easily use the canned variety.  I just recommend to at least mix the hot and original mild variety.  Who wants a bland pizza?!

The Starting Lineup

  • 2-3 rounds pizza dough (store bought or homemade)
  • 3 chicken breasts
  • 1 small yellow onion, chopped
  • 2 poblano peppers, roasted, peeled and chopped
  • 8oz ‘hot’ hatch green chiles
  • 4oz green chiles (to top pizza with)
  • 1/3 cup chicken broth
  • 2 cloves garlic, minced
  • 1 Tablespoon cumin
  • 1 tsp smoked paprika
  • 1 teaspoon kosher salt
  • 16 oz mozzarella cheese
  • 1/2 cup cilantro, chopped (garnish)
  • 1/3 cup cotija cheese (garnish)

*Makes 2-3 medium pizzas

**Your local pizzeria will often sell you fresh pizza dough, which makes your life that much easier!

In a large pot, sauté the onion till translucent (5-7 minutes).  Add in the chicken breasts, chopped poblano peppers, 8oz green chiles, chicken broth, garlic, cumin, smoked paprika and salt.  Cover, and simmer on low for 2 hours, until chicken is cooked through.

Remove the cooked chicken, shred and set aside, reserving the chile/poblano sauce.  Allow to cool slightly and use either an immersion blender or transfer to your stand blender and combine thoroughly.

Preheat the oven to your pizza dough recipe/brand’s instruction (often 500 degrees for homemade).  If homemade, roll out your dough to roughly 12″ in diameter.  Ladle on the pureed green chile sauce and top with your shredded chicken, extra green chiles and mozzarella cheese.  Bake in the preheated oven until your crust is a golden brown and cheese is bubbling and melty!

Remove and top generously with the fresh cilantro and cotija cheese, enjoy!

Chiles Relleno Breakfast Casserole

Classic chiles rellenos are a bit tricky and time consuming to make, especially if making for a crowd.  Now while this may not be the traditional dipped, battered and lightly fried at the perfect temperature, this recipe gives you the same flavor and is a breeze compared!  Plus, it is still served with that perfectly seasoned thin tomato sauce that is a must have and is a bit lighter given the “no fry” here.

So give this a whirl for your next brunch or south-of-the-border craving!

The Starting Lineup

  • 8 fresh poblano peppers
  • 1 Tbsp olive oil
  • 1 cup white onion, chopped
  • 4 cloves garlic, chopped
  • 1 28oz can tomatoes
  • 1 lb breakfast sausage (can sub chorizo), cooked
  • 1 cup cotija cheese (can sub feta)
  • 1 tsp each: cumin, Mexican oregano, kosher salt
  • 1 dozen eggs
  • 1/3 cup flour
  • 1 tsp baking powder
  • 2 cups Monterey Jack/ and or cheddar cheese, shredded

 

STEP 1:  Char the poblano chiles over an open flame or under the broiler.  Transfer to a paper bag (close) or a bowl topped with plastic wrap and allow to steam for 15 minutes.  Once done, gently remove the blackened skins, slice vertically (without cutting all the way through) and scrape the seeds out.  Set aside.

STEP 2:  Meanwhile, in a sauce pan over medium-high heat, sauté the onions in the olive oil till softened, about 5 minutes, then add in the garlic for another minute.

Next, add in the tomatoes, gently breaking up with your hand or a wooden spoon.  Stir in the cumin, Mexican oregano and salt to taste.  Bring to a simmer, set to low for 15-20 minutes and remove from heat to cool.  The sauce should be the consistency of a thin spaghetti sauce, not too thick.  If so, add a bit of chicken broth or water to thin.

STEP 3:  Preheat the oven to 375 degrees.  In a lightly greased 9×13 baking dish ladle in the prepared and cooled sauce.  In a large bowl, mix together the cooked breakfast sausage/chorizo with the cotija cheese and 1 cup of your shredded cheese. Stuff each poblano chile with the sausage-cheese mixture, it’s ok if it spills out a bit.  Place your stuffed poblano peppers overtop the sauce.

STEP 4:  In a large bowl, beat the dozen eggs and then whisk in the flour, baking powder and a hefty pinch of salt.  Pour the eggs over top the stuffed chiles and sauce.  Top with the remaining shredded cheese.

Bake, uncovered, for 30-35 minutes at 375 degrees until eggs are just set.  Remove and allow to cool for 5 minutes.  Serve with fresh fruit and warm tortillas if desired.  Enjoy!

Ranch Hand Potatoes

Ok, this is quite possibly my favorite side dish to bring to any potluck, tailgate party, picnic or just a side for a dinner at home when my husband smokes a brisket…yummmm.  This WILL feed a crowd and your crowd will leave nothing behind!

There are a few variations of similar recipes, but personally, they tend to be quite bland and have zero texture.  This doctored up version has many depths of flavors, yet is still mild enough for any palate with the bacon, chiles and that good, ol’ fashioned ranch flavor!  Plus it’s sooooo easy!  Basically, it’s a “dump & stir” side, bake and walk away!

The Starting Lineup

  • 6-7 russet potatoes
  • 1 package bacon, cooked crisp and chopped
  • 1 poblano pepper, chopped
  • 1-2 (4-oz) can of green chiles
  • 1 (10.5-oz) cream of chicken
  • 1 (10.5-oz) cream of poblano soup (*You can use another can of cream of chicken to substitute – 2 cans total)
  • 1 (16-oz) container of sour cream
  • 1 (1-oz) packet of Hidden Valley Original Ranch Seasoning
  • 2 cups shredded cheddar cheese (*I use Kraft Sharp Cheddar)
  • Green onions (scallions), sliced for garnish after baking

Let’s start with the simple “prep work”:

  1. Preheat your oven to 400 degrees.
  2. Cook up your bacon, drain/pat dry the grease, chop up.
  3. Clean the russet potatoes, cut in half and boil in salted water till just fork tender.  You do not want to over boil, as you’re not making mashed potatoes and want a bit of texture.  *I prefer to leave the skins on for visual appearance and, again, texture.  Drain into a colander and once cool enough to touch, cut into rough bite size pieces, similar to a potato salad.

For potlucks, I prefer to use a deep dish (disposable if possible) 11×9 foil pan.  By all means, you can use your handy 9×13 too.  Layer your par-cooked potatoes into your serving dish in an even layer.

In a large bowl, thoroughly stir together the cooked bacon, poblano peppers, green chiles, cream of chicken/poblano soups, sour cream, ranch seasoning and shredded cheese.

Pour over the potatoes and toss to coat.

Transfer, uncovered, to your preheated oven and bake for 50-60 minutes.  Top with the scallions and enjoy!!

Chili Blanco

I’ve never met a chili I didn’t like, seriously.  With beans, without beans (‘Bowl of Red’), smoked chipotle, turkey, molé style…I could go on and on and on..and I will.

Contrary to its pale appearance, the recipe below for Chili Blanco (blanco means white 😉) is hardly pale in flavor.  The roasted peppers add depth with a touch of heat, the Monterey Jack cheese and white beans add creaminess and the cumin, oregano, cayenne and garlic round out that south-of-the-border flavor.  This one here is a winner when you’re looking to branch out on your chili culinary adventure!

The Starting Lineup

  • 1lb white beans (Great White Northern), soaked overnight & rinsed OR 3 cans, drained & rinsed
  • 3 cups cooked shredded & chopped chicken (you can use a rotisserie chicken if needed)
  • 1 yellow onion, chopped
  • 2 (4oz) cans of chopped green chilis
  • 1 roasted poblano, skinned, seeded & chopped
  • 1 roasted jalapeño, skinned, seeded & chopped
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp dried Mexican oregano
  • Pinch of cayenne
  • 48oz chicken broth
  • 1 cup Jack cheese, shredded
  • EVOO 

Garnish Ideas

  • Avocado slices
  • Cilantro
  • Sour cream
  • Lime wedges
  • Jack cheese, shredded  

Assuming your chicken is cooked, beans are soaked and rinsed (if using dried) and your poblano & Jalapeno have been roasted, etc…let’s begin!! Whew!… 

 In a large dutch oven over medium heat, add in about 2 Tbsp of extra virgin olive oil. Once heated, toss in the onions and cook till translucent (about 10 minutes). 

 To the sweated down onions, add in the green chilis, poblano, jalapeño, garlic, cumin, mexican oregano & cayenne. Stir together for 1 minute. 
   Next add in the beans, chicken broth and the shredded & chopped chicken and bring to a low boil. 
 Once the bubbles start rolling, reduce heat to a simmer and cover. Stir about every hour or so for 2-3 hours (1 hour if using canned beans…but the longer the better either way really).
Finally, about 30 minutes before you plan to eat, mix in that cup of shredded Monterey Jack cheese. Re-cover and allow to melt in! 
 Serve this complex flavored chili with a dollop of sour cream, fresh cilantro, avocado slices and a lime wedge…oh and don’t forget more cheese and a fresh tortilla for dunking!! Enjoy! xo 
 

Green Chilé Turkey Meatballs

Here is an insanely flavorful and healthy recipe that will give the normal hum-drum appetizer or hot meatball sandwich a run for its money!  That’s right..these baked turkey meatballs can be used in a multitude of ways (a spin on the traditional albondigas soup anyone??)!  Plus, they are NOT dry or crumbling once browned and ready to eat.  It is really such a yummy alternative to the classic recipe.

Today though, I show you the above mentioned, a fun holiday appetizer and a filling hot hoagie sandwich!  …and BOTH don’t hurt your waistline too bad either 😉 Win!!

*I have a favorite green sauce from my favorite grocer, HEB, literally called ‘That Green Sauce’.  It’s a semi-thick, creamy roasted green chile sauce.  Feel free to use your favorite (even a tomatillo sauce)..or order from HEB online 😉

*For all my fellow ‘railroad wives’, prepare the sandwich as instructed below.  Wrap in foil and your spouse can heat them up on the trains engine as my hubby does!

The Starting Lineup

  • 3lbs ground turkey (85/15)
  • 1 poblano pepper (2 if making hoagies)
  • 1 Anaheim pepper
  • 1 jalapeño pepper
  • 1 Serrano pepper
  • 1/2 onion, finely diced
  • 4 cloves garlic, finely minced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup cilantro, chopped (divided 1:1)
  • 1 cup milk
  • 1 cup panko breadcrumbs 
  • 3 eggs
  • Hefty pinch each of salt, pepper & cayenne pepper
  • Spicy green sauce, for garnish

If making the delish toasted hoagie:

  • Bakery quality sub/Bolillo rolls
  • Pepper jack cheese slices 
  • Roasted poblano pepper slices
  • Cilantro
  • Spicy green sauce
  • Mayonaisse   

We’ll start this bursting with flavor recipe by placing our 4-5 chilé peppers onto a foil lined baking sheet, then pop it into the oven on broil (just inches under broiler).  Make sure to turn the peppers ever so often to blacken all of the sides.  You can also do this over an open flame (gas stove or grill).  Once blackened immediately place into a large bowl covered with Saran Wrap and set aside to steam. 

 After about 10-15 minutes, the peppers skins will loosen up and peel off the peppers easily.  Then slice open each pepper and scrape out the seeds and chop up.  *if making the hoagie, then reserve one of the roasted poblanos and cut into long strips after scraping out seeds and removing the blackened skin.  Set aside. 

 
Preheat oven to 375 degrees and line two large baking sheets with foil.

In a small bowl, combine the panko and the milk, allow to soak together.  

In a large bowl, combine the ground turkey, the 4 roasted and chopped peppers, onion, garlic, parsely, 1/2 of the cilantro and the spices, followed by the eggs and the panko-milk mixture.  With you hands (natures best tools!), mix together until all of the ingredients are evenly distributed.

Now, again, with your hands or an ice scream scoop, make the turkey meatballs (about large golf ball size) and place onto the prepared baking sheets.  Once you have them all finished, place the sheets into the oven for 40-60 minutes, until no longer pink in the middle and nicely browned on the outside.  *depending, you may have to alternate racks once or twice during baking for even cooking. 

 Once they are finished, remove from the oven and allow to rest for 5 minutes…

NOW…if you’re making these for an appetizer, then place on a pretty platter alongside a spicy green sauce for dipping and garnish with the remaining chopped cilantro overtop.  Gorgeous and fun!! 

 OR….if you’re making a meal out of these flavorful meatballs then try this on for size!!  Slice your hoagie rolls in half and apply 1 Tbsp of mayonaisse to each side.  On the bottom slice, lay down a few meatballs and a nice slice of pepper jack cheese and put this into your oven (on broil) for just a couple minutes (until bread is toasted/cheese melted).  Remove from oven and garnish with the reserved chopped cilantro, roasted & sliced poblanos and a drizzle of your spicy green sauce!  Soooo gooooddd!!!!

Spicy Shredded Chicken & Cheese Stuffed Poblanos

I was in the mood for a Chilé relleno, but didn’t want the heaviness that goes along with such a meal.  These stuffed poblanos have a fresher taste since they’re only roasted instead of fried and contain only a couple of simple ingredients!  A nice light take on a Mexican fave!

*Use whichever flavor or cut of cheese you prefer. I used cheese sticks because they’re were handy and the exact flavors I was wanting.

*When I say red sauce, I do NOT mean enchilada sauce..though you’re welcome to try!  I’m thinking more along the lines of that super spicy sauce you get a Mexican restaurants in the smaller dish or from the kitchen.  Basically a spicy, thin salsa.  Make sense??

The Starting Lineup

  • 2 cooked chicken breast, shredded (rotisserie, poached)
  • 4-6 poblano peppers, roasted (skin-peeled)
  • 6-8 Cheese sticks (I used a mix of pepper jack & manchego)
  • 1/4 cup spicy red sauce (homemade, HEB, el Pato, etc)
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • Evoo
  • Kosher salt & pepper

Garnish

  • Mexican crema or sour cream, more red sauce, cilantro, limes.. 

Assuming that your chicken and poblanos are already prepped and ready to go (shredded/chopped and roasted/peeled), we’ll start with the onions!

 In a sauté pan heat about 1Tbsp of EVOO to medium heat.  *You always want your oil hot before you add in your ingredients.  Add in the 1/2 of a diced onion into the pan and allow to sweat down a bit while stirring.  After about 3-5 minutes and in the minced garlic.  Cook both of these together for just 1 minute and remove from the heat.  Burnt garlic is sooo not good!

 Transfer the cooked down onions & garlic to a large bowl.  Along with those you’re going to add in the cooked chicken, the spicy red sauce and a pinch each of kosher salt & pepper.  Feel free to add more red sauce if you’d like, you just don’t want it too wet.

   On to the poblano peppers…after the blistered skins are removed, make a couple inch slit into just ONE side.  Do NOT cut all the way through.  With a small spoon carefully scrape out as much of the seeds as you can.

 Next, place half of a cheese stick into the poblano (I used pepper jack here).  Next add a good size scoop of the spicy chicken mixture into the poblano.  Finally, top with 1 more cheese stick (I used manchego, melts beautifully, and just cut in half for two pieces).  Place the finished stuffed peppers onto a baking sheet or baking dish.

   Place the stuffed poblano peppers into your oven set on broil.  Have the rack about 6″ under your broiler and watch closely, as this will only take a few minutes.

Once the cheese is ooey-gooey they’re ready to devour!  Serve along side a light rice or beans and garnish with a Mexican crema/sour cream, more red sauce, cilantro and a lime!  Enjoy!!

Creamy Poblano Rice

I have a deep affection to the poblano pepper.  Yes, I am 100% more of a spice girl, but these richly colored and medium heat peppers are so versatile that everyone can enjoy them.  (My three year old ate two full helpings of this dish it’s flavorful, not hot).

Everyone I know grew up eating the traditional orange-y ‘Spanish rice’ with their tacos…why didn’t we ever change up the flavor??  Ok, I know in my childhood home it was because rice-a-roni didn’t make it, but still!

That being said, this recipe takes about 30 minutes to make and boxed rice takes about the same…so give it a try!

*and if your really not into making homemade rice, at least make the creamy poblano purée and add it to some cooked, instant rice.  Done! ☺️👌

The Starting Lineup

  • 1 cup basmati rice
  • 3 poblanos, seeded and roughly chopped 
  • 1/2 white onion, chopped
  • 5 cloves garlic, minced
  • 1/2 cup cilantro, roughly chopped
  • Juice of 1/2 a lime, the other half for garnish
  • 1 cup heavy cream
  • 2 cups chicken stock
  • 1tsp kosher salt
  • Canola oil  

Like usual, we start by prepping our produce.  This always makes everything go smoothly and quickly!  Rinse and cut each as instructed. 

     In a skillet, add together your chicken stock and the poblano peppers.  Bring to a low boil and semi cover.  Allow the peppers to soften for about 10-12 minutes. 

 

We’ll now add in just 1/2 of the heavy cream, cilantro, lime juice and salt.   From here you can either use an immersion blender (straight into the pan) OR pour this mix into a blender or food processor.  Blend till smooth, a little chunky is ok 🙂  Transfer to a bowl and set aside.

  

 

Next…in the same skillet, quickly wipe clean with a paper towel.  Add in a Tbsp of canola oil on medium heat.  

Now goes in the rice and chopped onion.  Stir around until the rice takes on a white appearance. (About 5 minutes).  Add in the minced garlic and cook for 1 more minute. 

 

The last step has arrived (pretty easy so far right?),  pour your creamy poblano mix into the rice and coat.  *here is where I’ll add the other 1/2 cup heavy cream and if needed another 1/2 cup chicken stock.  

Turn heat down to medium-low, cover and allow to simmer for about 15-20 minutes till tender, but still with a chew.  Mushy rice is yuck.  You can stir it once or twice, but try to keep that steam heat in with the lid on. 

 

All done!!  Serve along side a mexican inspired dish, chicken, pork or fish with a lime wedge garnish!  Enjoy!
