Seared Pork Chops w/ a Southern Bacon Tomato Gravy

You get it by now..we LOVE our comfort food in this house!  If I’m not devouring a taco or 5, you can often find me with a big ol plate of braised meat, mashed potatoes and gravy!  Oh my….

This is actually a pretty quick recipe that you don’t have to let stew all day long, but will still gives your home a wonderful aroma and a family pleasing meal..  So even consider this for a filling weeknight dinner!

The Starting Lineup

  • 2 lbs pork chops
  • 4 strips of bacon, grease reserved
  • 1/2 large onion, chopped
  • 1 clove garlic, minced
  • 14.5 oz can of tomatoes (w/ onion, celery & bell pepper)
  • 2 Tbsp flour
  • 1 Tbsp butter
  • 1/2 cup milk (*you can use all milk instead of chicken stock if desired)
  • 1/2 chicken stock 
  • 1 tsp brown sugar
  • 1 tsp paprika
  • Salt & Pepper
  • Olive oil  

Begin this recipe by liberally seasoning the pork chops with a bit of oil and the paprika, salt & pepper and set aside. 

 In a large heavy-bottomed-pot or pan, begin to cook the bacon over medium heat till just crisp.  Remove the cooked bacon to a paper towel lined sheet while reserving the bacon grease.   Next, to that grease, add in the 1 tbsp of butter, the onions and cook till slightly translucent and then add in the garlic. 

   Turn the heat down to medium-low and follow this up by sprinkling the flour over the onion/garlic mixture and stirring to make a rue.  Slowly pour in the milk (& chicken stock if using) while stirring continuously.  Get those flour lumps out!   Finally add in the can of tomatoes (with juice) and brown sugar.  Bring to a low boil and then down to a simmer, stirring occasionally. 

    

I wanted to mash up my tomatoes just a bit here..

 If you’re really good at multitasking, while you’re making the above Bacon Tomato Gravy,  have another pan set on medium-high heat with a tbsp of oil in it.  Once hot add in the pork chops (2-3 at a time/don’t overcrowd pan) and sear for 1-2 minutes on each side.  Immediately after each pork chop has been seared, add straight to the gravy, cover, and let simmer for 20-25 minutes to cook through. 

   *During the simmering of the pork chops, I like to complete my side dishes, which are typically fresh, sautéed vegetables and mashed potatoes.

Time’s up!!  Spoon a good amount of mashed potatoes onto a plate and place a juicy pork chop on top.  Ladle that warm Southern Bacon Tomato Gravy over the chop & potatoes and top with the reserved bacon and some parsely…just don’t forget the veggies!!  Enjoy! 

 

Hard Cider Pork Chops

Here’s a real hearty, German, bring-me-back-to-the-Midwest sort of meal!  It’ll fill your family’s bellies and also be on the table in 30 minutes!!

Kids also enjoy this meal with the sweet apples, potatoes and mildness of the pork…now for the adults, go ahead and pour yourself a glass of hard cider to go with and enjoy!

*GlutenFreeMeal (though MANY are, just double check the apple cider/Hard cider)

The Starting Lineup

  • 1 pckg pork chops (4 at about 1″ thick)
  • 1 sweet onion, sliced
  • 2 apples, sliced
  • 1 cup hard cider (or regular non-alcoholic)
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp butter
  • 1 Tbsp extra virgin olive oil
  • 1/2 tsp dried sage 
  • 1/2 tsp dried thyme leaves
  • Kosher salt & pepper 

Side

  • Potatoes, (fried or baked)  

Begin this simple Midwest influenced dinner by seasoning both sides of the pork chops with the sage, thyme leaves, salt and pepper.  Set the pork aside and slice up the onion and apples. 

   Heat a large pan to medium-high and add in the olive oil and butter.  Sear each side of the pork chop for 3-4 minutes (a nice brown color) and set aside again.

In that same pan, add in the sliced apples and onion and saute for 6 minutes (till onions start to soften and turn translucent); add in the hard cider and the apple cider vinegar and bring to a simmer. 

   Return the seared pork chops to the pan, cover and cook for 5 more minutes.  Serve along with potatoes with the juices from the apples and onions drizzled overtop, enjoy! 

 
Potatoes

Feel free to make your spuds as you wish or maybe change it up everytime you prepare these chops, but here’s how I did ours.

First put the potatoes into a large stockpot of salted water till just covered.  Bring to a gentle boil and the cover pot with lid.  Allow to cook for about 15 minutes.  Till JUST soft when you stick a fork in them, not falling apart.

Drain and remove from pot and when just cool enough to handle, dice up into cubes and season with kosher salt & pepper.  *sometime I’ll sprinkle on seasoned salt or smoked paprika, etc.

Heat up a cast-iron pan to medium heat and then add 1-2 tbsp (canola) oil.  Add in cubed potatoes and allow to cook, not stirring to often, to create a nice “char” on them.  Enjoy!

Smothered Italian Pork Chops

This isn’t my normal comfort food cuisine.  The weather is getting slightly warmer, so I thought I’d lighten it up a bit this week with this one!  Don’t let the “smothered” part fool you.  The lean pork chops are topped with fresh veggies and stewed tomatoes.  No heavy cream here….though it’s not a bad idea. At all..

The Starting Linup

  • 2 lbs pork chops, bone in OR boneless
  • 1 box Orzo pasta
  • 2 cans Italian Stewed Tomatoes
  • 1 yellow squash, thickly sliced
  • 1 zucchini, thickly sliced
  • 1 pckg mushrooms
  • 1/2 red onion, thickly sliced
  • 4 cloves garlic, smashed and roughly chopped
  • Kosher salt & pepper 

Start this easy meal by rinsing and chopping your vegetables.  These make for some pretty colors together!  I choose to thickly slice them, as they hold up better after being cooked in the crockpot for hours.  If they’re too thin they’ll almost just disappear and have absolutely no texture.

Layer about 3/4th’s of these veggies down into your crockpot coated in nonstick spray.

Generously salt & pepper your pork chops and place onto the veggies.  Top the chops with the rest of the vegetables and pour in the two cans of stewed tomatoes.  If needed, also add in 1 cup of water or chicken stock.

Cover and set to high for 4-6 hours and let that genius device do everything for you!  Here is where I finish picking up the millions of Hot Wheels cars and toy monster trucks from under my feet and head off to t-ball practice, because this is a glorious crockpot meal!

When time is up, cook your orzo according to package directions. *Though orzo looks like rice, it is actually a pasta!  You can find it right where the good ol spaghetti noodles are 🙂

Spoon a cup of orzo pasta into a bowl and smother with the tender pork chops and tomato veggie mix.  I like to shred some parmesan cheese over top for a bit of extra saltiness.  Here’s an easy & healthy meal that will not leave you filling hungry!
